- 2 tablespoons olive oil
- 1 pound chicken breasts, boneless and skinless
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 medium carrot, sliced
- 1 stalk celery, sliced
- 1 1/2 cups gluten-free noodles
- 1 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Heat olive oil in a large pot over medium heat. Add the chicken breasts and cook until browned and cooked through, about 6-8 minutes per side. Remove from the pot and set aside to cool.
In the same pot, add the diced onion and minced garlic. Cook until softened, about 3 minutes.
Add the chicken broth, sliced carrots, and celery to the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes until vegetables are tender.
Shred the cooked chicken into bite-sized pieces and return to the pot. Stir in gluten-free noodles, thyme, and parsley. Simmer until noodles are cooked, about 10 minutes.
Season with salt and pepper to taste. Garnish with fresh parsley before serving.
For a richer flavor, use bone-in chicken.
You can add more vegetables like celery or bell peppers for extra flavor.
If you don’t have gluten-free noodles, you can substitute them with any type of noodle.
